I hope everyone had a fun and relaxing weekend! We finally tackled a few of the bigger projects for our wedding – what a relief! When hours worth of wedding tasks are accomplished, our big day doesn’t seem so far away. 47 days to be exact – read or not, from here on we count down!
Coffee and protein shakes – two of my favorite beverages combined into one! I blended this drink after running three miles in eighty degree weather mind you, so the deliciousness of both immediately made my taste buds jump with joy. I’ve learned to love cold coffee – blended or iced, it doesn’t matter.
I love this drink in the morning after my runs (OK, obviously Erin, basically what you just said). But for real, coffee is always necessary in the mornings (especially with an 8 month old). So, when I can have my coffee and protein in the same yummy beverage, I’m so ready to start my day!
I add the ice cubes, almond milk and creamer, then pulse a few times to break up the ice cubes a bit before combing the other ingredients. I’ve learned (over many, many times of using my blender) that it’s much easier to clean up afterwards. After the ice cubes are broken up into smaller pieces, then rest ends up mixing better.
One of the best parts about blending drinks is you don’t wait for it to be done. Pop all the ingredients into a blender, and voilà! It seems as if my coffee maker takes forever, maybe that’s why I’ve been so content with my blended or iced coffee.

- 5-6 ice cubes
- 1 1/2 tbs instant coffee
- 1/2 c. almond milk (I used unsweetened vanilla)
- 1 tbs sugar-free hazelnut coffee creamer
- 1/2 tbs cocoa powder
- 1 tsp vanilla extract
- Place ice cubes in a blender.
- Add almond milk, coffee creamer, and vanilla extract.
- Pulse until mixture is smooth.
- Add instant coffee and cocoa powder.
